In the summer of 1992, Airman ReFalo was honorably discharged from the U.S. Airforce. It was weeks later that I met him at Grounds for Coffee (3005 Harrison Boulevard, Ogden Utah).

Anyone who knows Paul today might think he is too feral for the military. I have a hard time believing it myself and there is far too little physical evidence to support it.

I met Harry Griego in Ogden/Layton Utah. He is now a pilot for ?????? and was in Portland last night. We took him to the Kennedy School to catch up.

Cold Peanut Noodles

  • 1 pound spaghetti
  • 8 ounces snow peas
  • 1/2 cup smooth peanut butter
  • 2 garlic cloves
  • 1 jalapeño pepper
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1/4 teaspoon salt
  • 8 oz cubed tofu

In a large pot of boiling salted water, cook 1 pound spaghetti until al dente, according to package instructions. Drain and rinse with cold water. In a large bowl, combine pasta with 8 ounces snow peas, slivered lengthwise, and 1 red bell pepper, cut into long thin strips.

In a blender, purée 1/2 cup smooth peanut butter, 2 garlic cloves, 1 jalapeño pepper (seeds removed, if desired), 1/4 cup soy sauce, 1/4 cup rice vinegar, 1/3 cup warm water, 2 tablespoons toasted sesame oil, and 1/4 teaspoon salt. Pour dressing over noodles, vegetables and tofu; toss to coat. Serve chilled or at room temperature.

Substitutions: This dish can be made with Japanese noodles,such as udon or soba, or Chinese rice noodles.Cook according to package instructions.

Mostly Recovered

I’m back up after 8 days from the disaster that was WebHostPlus.  I don’t know if it was space aliens or pirates but I am grateful to google for cashing copies of the hundreds of pages that I had in databases that weren’t backed up. 

The original rumor was that the new owners were pirates and stole the hardware in the night. Now the story is hackers brought it down.

The server came back on 9/27/06 and I got to back up my databases so I’m pretty well restored now. I have off-site backups now.  I’ve been doing way way way too much web work the last couple of weeks. I did get to do a couple of new sites:

  • Cooking with Janet – recipe blog for my mother.
  • Portland Shambhala – pared down website for the Portland Shambhala Center with pretty cool calender/event dynamic functionality.

I’ve been teaching Paul how to use wordpress to update websites.  He made his first webpage edits and link changes. WooHoo :)
