Becky's Cake

My Sister Becky got married on Saturday 2/11/06. Here is a link to the photos. I took a cake decorating class with my mom when I was in the 7th Grade. It must have been six weeks long. We made a cake every week. I remember the teacher disliking me. Through my teen years I was the cake baker. Every family & friend birthday I was on cake duty. For my friend Diedre’s 16 birthday I made a dark purple 3 Tiered Cake. Years of goppy frosting covered delights. For at least one decade, maybe two, there were no cakes. I don’t like frosting and avoided sugar for years. As a suprise, I made Paul a powerpuff girl’s birthday cake that freaked him out. He didn’t know you could make novelty cakes and that I could do it.

We had a run of a few year of novelty cakes but nothing to recommend me as a wedding cake decorator. I made a practice cake at home. So Becky could see my skill level and not be disappointed on the big day. I made an extra 100 roses. The plan was to have a pile of them in the middle of the cake. When I put the outer few on, it looked done.

Strawberry-Vanilla Yogurt Pancakes

Strawberry Pancakes1 ½ C Flour
3 sugar
1 tsp baking powder
1 tsp baking soda
½ tsp salt
3 eggs
6 oz Vanilla Yogurt
¾ C water
3 T butter melted
1 ¾ c sliced fresh strawberries
1 C strawberry syrup warmed

Heat griddle or skillet over medium heat (375) Grease griddle with vegetable oil if necessary.

In a large bowl, mix flour, sugar, baking powder, baking soda, yogurt and water with wire whisk; beat in butter. Pour egg mixture all at once into flour mixture; stir until moistened.

For each pancake, pour slightly less than ¼ cup batter from cup or picture onto hot griddle. Cook pancakes 1 to 2 minutes or until bubbly onto puffed and dry around edges. Turn and cook other sides 1 to 2 minutes or until golden brown. Top each serving (2 pancakes) with ¼ C sliced strawberries and about 2 T syrup.

I’m in Logan, Utah for my sister Becky’s Wedding. My Brother Jim, his wife Becky, the kids (Clayton, Ashley, Andrew) are here. I’m working Tuesday/Wednesday from Jim’s old bedroom. Jim works for IBM and is also telecomuting (from my old bedroom).
